  • Marinated Zucchini

    This is the perfect summer salad—cool, light, and utterly delicious. Use fresh zucchini when it is in season (in the early summer), as it has the most flavor then.

    YIELD: 4 SERVINGS
    • 2 medium zucchini, thinly sliced lengthwise
    • 1 tablespoon (15 mL) chopped fresh mint
    • 1 tablespoon (15 mL) extra virgin olive oil
    • 2 tablespoons (30 mL) lemon juice
    • 2 tablespoons (30 mL) pecorino cheese

    1. In a mixing bowl, combine all the ingredients. Stir and let sit at room temperature for at least 30 minutes to allow the flavors to combine.

    2. Serve chilled or at room temperature.
