  • Peasant Chicken

    This simple and delicious peasant dish is perfect with Potatoes and Peppers (see recipe). Its simple flavors pair well with a rosé or a light red wine.

    YIELD: 4 SERVINGS
    • 4 pieces chicken, bone in, skinless
    • Salt, to taste
    • 4 tablespoons (60 mL) extra virgin olive oil
    • 2 medium onions, peeled and sliced
    • 2 garlic cloves, peeled and thinly sliced
    • Fresh rosemary, to taste
    • Fresh sage, to taste
    • 2 cups (473 mL) dry white wine

    1. Wash the chicken, pat it dry, and season it with salt on all sides.

    2. In a heavy skillet, heat the olive oil over medium-high heat. Add the chicken and brown well on all sides, about 12 minutes total. Add the onions and continue to cook for another minute. Add the garlic, rosemary, and sage and cook for another minute, or until the garlic releases its aroma.

    3. Add the wine and scrape any brown bits from the bottom of the pan. Reduce the heat to a slow simmer, cover, and simmer for 20 minutes.

    4. Serve hot.
