The beauty of this dish is that it can taste many different ways, depending on the fish you use. It is light and flavorful, and because of its simplicity, the fish shines in all its glory. So, choose your favorite fish and you will have a great dinner in no time.
1. Preheat the oven to 375°F (191°C).
2. Cover the bottom of a large baking dish with lemon slices. Place the fish on top of the lemon slices. Distribute the olives, garlic, and parsley equally among the four fish, placing them inside the cavities. Pour about 1 tablespoon (15 mL) olive oil on each fish and rub it all over.
3. Bake for 15 to 20 minutes.
