A sweet and juicy addition to the classic Collins.
In electric juicer, juice 4 strawberries, set aside. Juice rhubarb into a separate glass. Set aside. To mixing glass, add 1 ounce strawberry juice, 1 1/2 ounces rhubarb juice, Fresh Sour, gin, and egg white. Add ice to tin and tall glass. Shake well. Strain into the iced-filled glass. Top with club soda. Garnish with a strawberry heart by slicing the strawberry lengthwise into thin slices.
