    Rhubarb Strawberry Collins

    A sweet and juicy addition to the classic Collins.

    • 5 large, ripe strawberries
    • 1 stalk of rhubarb
    • 1 1/2 ounces Fresh Sour
    • 1 1/2 ounces gin
    • Splash of pasteurized egg white (look for small cartons of pasteurized egg white in the dairy section)
    • Club soda

    In electric juicer, juice 4 strawberries, set aside. Juice rhubarb into a separate glass. Set aside. To mixing glass, add 1 ounce strawberry juice, 1 1/2 ounces rhubarb juice, Fresh Sour, gin, and egg white. Add ice to tin and tall glass. Shake well. Strain into the iced-filled glass. Top with club soda. Garnish with a strawberry heart by slicing the strawberry lengthwise into thin slices.

    This drink dates from the late 1800s. Cocktail lore suggests this recipe is inspired by the Collins, which may have been invented in St. Louis or London. One story suggests that the original Tom Collins was made with “Old Tom” gin, a sweetened variety of gin that was available before London dry gin. When made with gin and Fresh Sour, the Collins is a true classic.
