    Tilly’s Limoncello Infusion

    In honor of Great-Great Aunt Tilly, pictured at right. Aunt Tilly was the first female bartender in my family. She was a stunning woman with lavender eyes who was as sturdy as she was beautiful. She managed the family tavern in the coal-mining town of Coal City, Illinois, during an era when women were not allowed to be patrons. This infusion is dedicated to the courageous spirit of women and celebrates Tilly’s Italian heritage.

    • Rinds of 9 large lemons
    • Rinds of 4 large oranges
    • 2 vanilla beans (sliced lengthwise)
    • 1 750 ml vodka
    • 1 cup Simple Syrup
    • 1/2 bar spoon cream of tartar

    Add fruit rinds to 3-quart glass infusion jar. Add vanilla and pour vodka over the top. Save liquor bottle. Let rest for 3 weeks in a dark, cool location. Using a sieve and funnel, strain into original vodka bottle. Add Simple Syrup and cream of tartar. Mix well. Refrigerate.
