    Savory Onion Infusion

    I often use Savory Onion Infusion as a marinade for meat or a spicy addition to vodka sauce. Simply add steaks or chicken fillets to a plastic bag and cover with this infusion. Let rest overnight in refrigerator. For a savory kick, substitute this infusion instead of vodka in any vodka sauce recipe.

    • 4 large onions (sliced)
    • 1 jalapeno pepper (sliced thin)
    • 2 green bell peppers (sliced thin)
    • 20 peppercorns
    • 2 750 ml vodka

    Layer onions, jalapeño, bell pepper, and peppercorns into 3-quart glass infusion jar. Pour vodka over top. Save the liquor bottles. Let rest for 7 days at room temperature. Using a funnel and sieve, strain back into vodka bottles. Refrigerate.
