    Bing Cherry Infusion

    Balanced nuttiness, blended with tart sweetness.

    • 9 pints pitted Bing cherries
    • 4 cinnamon sticks
    • 1 750 ml amaretto
    • 1 750 ml VS cognac

    Place fruit and cinnamon sticks in infusion jar. Pour amaretto and cognac over the top. Save the empty liquor bottles. Let infusion rest for 14 days at room temperature. Using a funnel and a sieve, strain liquid back into bottles. Place cherries in sealed glass jar and refrigerate them for later use as garnishes on cocktails like the Old Fashioned and Manhattan.
