  • Indian as Apple Pie Green Juice Smoothie

    YIELD: 4 CUPS / 950 ML
    TOOLS: You’ll need a powerful blender, such as a Vitamix.
    • 3 stalks kale, cleaned and trimmed (discard hard inner vein)
    • ½ small cucumber, peeled and trimmed
    • 1 1-inch /1 3-cm piece karela (bitter melon), skin-on and deseeded* (optional, see below)
    • 5–6 sprigs parsley
    • 1 small carrot, cleaned and trimmed
    • 1 (1½-inch) /1 (4-cm) piece fresh turmeric, peeled
    • 1 (2-inch) /1 (5-cm) piece ginger, peeled
    • 2 small key limes or 1 regular lime, peeled
    • 3 pineapple chunks
    • 1 tangerine, peeled
    • 1 clove garlic, peeled
    • 1 tablespoon flax seeds
    • 5 ice cubes
    • 3 cups /710 mL cold water

    1. Combine all the ingredients in the order listed above in a powerful blender, such as a Vitamix, and blend at the highest setting for 2 to 3 minutes, until completely smooth and slightly frothy. If you don’t have a Vitamix, you can make this in any quality blender, but you may need to add more water to help smooth it out. Remember, this is more of a smoothie than juice from a juicer—it still has pulp and fiber, so it’s a little thick.

    2. Transfer to serving glasses and serve immediately or store in the refrigerator for up to 2 days. This makes enough for my family to have a little as well. I keep leftovers in a glass in the fridge to sip throughout the day or the next morning. After 2 days, it will start to get bitter.

    *Although bitter melon has many amazing healing properties, it can have adverse effects for people on diabetes medication. Please consult your doctor before adding it to your regular diet.
