Unlike the West, in India dessert isn't given after every meal. We tend to gravitate toward seasonal fruits instead. But, whenever there are puja (prayers) or if there's an extra-festive occasion (and there are many), we always make or purchase our favorite mithai, or dessert.
Most Indian desserts can be labor intensive to make, which is why I think the art is slowly dying. Instead of laboring at home over all the different steps, most of us head to the local sweet shop and buy our sweets. That's why I have given you the recipes in this section that are relatively easy to make at home. They're my children's favorites, and I suspect they'll become yours as well.
