Laurent Gras' Squash Soup in My Provence is something that I dream about. It's smooth and rightly sweet. It has the idyllic je-ne-sais-quoi undertones from pan-roasted celery root and Tabasco sauce. His suggested additions of earthy Shiitake mushrooms or crisp-skinned dark meat chicken make this light-bodied soup a comforting Fall supper for family and friends. When writing this recipe, Chef Gras wisely stated that "There are as many ways to cook squash for soup as there are cooks."
